Apple Blueberry Flax Breakfast Cookies

DSCN4775My youngest son has reached that magical toddler stage of saying no to anything I think is a good idea.  My once fantastic eater is refusing food just because I’ve suggested it.  When I saw a healthy cookie recipe with bananas pop across my Facebook feed, I decided to give it a try.  He loved them so I set out on a mission this morning to mix up more breakfast cookies.  I’m sure there will be many more of these recipes to come as he is refusing to eat fruit, cereal, and oatmeal for breakfast lately, but is loving these.

Apple Blueberry Flax Breakfast Cookies

Ingredients

  • DSCN4777Four medium apples – peeled, steamed, and mashed
  • 1/3c unsweetened applesauce
  • 1/4c almond milk
  • 1/4c flax seed (ground)
  • 1/4c barley
  • 1 1/2c oats
  • 1/4c chopped dates
  • 1/4c fresh blueberries, chopped or whole
  • 2tsp vanilla
  • 1tbsp ground or freshly grated cinnamon

Directions

Mix all ingredients together in a medium bowl.  Place 1/8c spoonfuls onto a baking sheet with parchment paper and bake for 15-20 minutes until golden brown in a 350*F preheated oven.  Makes approximately 20 cookies.
Cookies will have a soft consistency and mild flavor.  Chopping the blueberries will make sure they are evenly distributed through the batter while leaving them whole will give bursts of flavor.  CookiesForBreakfastI have added no sugar and my tot LOVES them!
